Dill Green Beans

Have any of you guys made your own dill veggies? I found this recipe and I wanted to share it with you guys! Of course I changed a little for my own taste preferences:) 

Ingredients:
4 lbs. green beans
8 dried 2 inch thai chili peppers
4 tsp. mustard seeds
4 tsp. dill seeds
8 garlic cloves
5 c. vinegar
5 c. water

Preparing:
Cut your green beans into lengths that will fit into pint size jars. Pack the beans into hot, scalded jars. Add one of the thai peppers, 1/2 tsp. of mustered seeds, 1/2 tsp. of dill seeds and one garlic clove to each jar. Combine the vinegar and water in an enamel or stainless steel pan and heat tell it comes to a boil. Once it comes to a rolling boil turn off the burner and pour the boiling liquid over the cut beans. Make sure to leave a 1/4 of an inch of headspace. At this point make sure the tops of the jars are clean and free from the debris before you put the lids and seals on your jars. Process your dill green beans in a hot water bath for 5 minutes. This makes 8 pints:)

Spicy Christmas - Thai Pepper Sauce

What's more special than giving a gift from your very own garden.  Homemade gifts are always special and unique, especially when they are planted, grown, and picked from your very own garden.  Lots and lots of love goes into our garden and it is a real joy for us to share not only with our loved ones, but also with all of you!  Be sure to be be creative!

Got lots of peppers this year?  Here is an idea for you to share them.  In this video I will be showing you how to make a hot pepper sauce that will blow your mind. A little bit of this tangy sauce goes along way!!  Use it in place of your favorite hot sauce on dishes such as sautéed veggies, steak marinade, even a salad dressing!!

Enough with how great it taste and what it can be used on!  Lets get this sauce going:)...

Dehydrating Peppers

Hi everyone!!

As most of you all know, I purchased an Excalibur Dehydrator! the One i got was the nine tray model which we sell in our store for dehydrators and books on the subject. Here is the link Preserving Foods!

I tried to do canning (and I still will do canning for certain things) but dehydrating seems to be the way to go for me. There are some things that need to be pre-prepped before you dehydrate them but, for the most part, you can dehydrate most vegetables and keep them for up to 25 years if stored properly!

As far as I know, you can't do that with canning. So, dehydrating foods for me is going to be the way to go:)

Thus far, I've tried to dehydrate green grapes, onions, and bell peppers. But this blog is about dehydrating red bell peppers so let's get to it:)


Drying tomatoes with the sun!

Hello everyone! This is Matt from Home Farm Ideas and in this episode my wife Rochelle attempted and succeeded in dehydrating tomatoes using only the sun. This was both hers and my first time dehydrating tomatoes using the sun:)

It took about two or three days to dehydrate all these tomatoes and one napkin. We noticed that these heirloom Brandywine tomatoes were extra juicy and so they put a lot of tomato juice (when we sliced them up) onto this plate in the video. We also flipped the tomatoes several times over the whole time they were dehydrating. We did not have a big bug issue this time around but who knows what the future will hold;)


We rather enjoyed doing this and I would like to encourage all of you out there to try this method before you go spending lots of money on dehydrators if this works than why not use this instead to dry tomatoes. I am not against dehydrators at all! As a matter of fact, I am sure they will speed up the process and help to stop any bugs from getting at your foods while they dry. Here are some dehydrator's that I've heard are good and cheap.




I have to tell you that it made the best sun dried tomatoes I have ever had!!
